INGREDIENTS
5 tablespoons oil
1 medium white onion, diced
2 cloves garlic, minced
1 medium red bell pepper, diced
4 cups water
3 cups long-grain white rice
5 cups Simple Red Beans (recipe follows) or canned beans
1 tablespoon salt
DIRECTIONS
In a large skillet, heat oil over medium heat. Sauté onion, garlic, and pepper.
Then add water and let it boil. When hot, add rice, beans and salt.
Stir and heat through. Cover with lid and decrease temperature to medium-low heat. Let it cook for about 20 minutes or until rice is cooked.
